Our original apple cider vinegar goes through two fermentations. In the first fermentation, the sugar in the apple juice changes to alcohol. In the second fermentation, the alcohol changes to acetic acid. 
The way we make vinegar -- the traditional way -- the second fermentation is really slow. It takes between 13 and 18 months to make a batch of vinegar.
We added a generous amount of local honey to a finished vinegar barrel. The sugar in the honey first turns into alcohol and then slowly into vinegar. It took two additional years  to complete, but it is oh-so-worth it! This triple-fermented vinegar isn't sweet, but you can smell the honey in it. It's extremely perfumed and delicately aromatic. You can use it for everything--but do it slowly, since our supplies are extremely limited of this one!

We grow a variety of apples: Pink Pearl, Red Rome Beauty, Yellow Bellflower, Gravenstein, and Golden Delicious, just to name a few! Sustainability is key, so our trees are rain irrigated and all of our apple pomace and waste is spread out to fertilize our trees. Peel to pip, our process is a closed loop.
