Transform your autumn salads with our Roasted Apple Vinaigrette, where the natural sweetness of roasted apples meets the bright tang of our apple cider vinegar. Roasting the apples brings out their caramelized depth, creating a velvety dressing that clings perfectly to hearty fall vegetables.
Try it on our favorite autumn salad: Toss baby kale and butter lettuce with roasted golden beets, toasted walnuts and thinly sliced apples. Add crumbled mild goat cheese and fresh thyme leaves. For a plant-based version, swap the goat cheese for your favorite plant cheese, or chickpeas roasted in olive oil.
Ingredients
- 2 medium apples
- a splash of olive oil

1/4 cup apple cider vinegar
- 1 small shallot
- 1 tablespoon Dijon mustard
- 1/2 teaspoon kosher salt
- 1/2 cup olive oil
Directions
- Core 2 medium apples (leave skin on) and toss with a splash of olive oil.
- Roast at 400°F for 15 minutes until soft.
- Once cooled, blend with 1/4 cup apple cider vinegar, 1 small shallot, 1 tablespoon Dijon mustard, 1/2 teaspoon kosher salt, and 1/2 cup olive oil until smooth.
